Fresh Walnut Lemonade
Ingredients
- Makes approx. 1 litre:
- 100 g California walnut kernels
- 4 tbsp agave syrup (or maple syrup for a stronger flavour)
- 2 lemons (freshly squeezed)
- 750 ml sparkling mineral water
- 100 ml hot water (not boiling, approx. 80 °C)
- Plenty of ice cubes
Preparation
- Making the walnut syrup: Place the walnuts, agave syrup and hot water in a high-powered blender. Blend everything on the highest setting for approx. 1–2 minutes, until you have a completely smooth, milky liquid.
- Straining: Pour the mixture through a very fine sieve (or a muslin cloth) into a small bowl. This removes any tiny particles and leaves you with a velvety-smooth syrup.
- Mixing: Mix the walnut syrup in a large carafe with the freshly squeezed lemon juice.
- Topping up: Fill the carafe generously with ice cubes. Then carefully top up with cold mineral water.
- Serving: Give it a quick, gentle stir to distribute the syrup, and serve immediately in glasses.
