Ingredients

  • 2 tablespoons butter
  • 2 cups California walnuts
  • 1 tablespoon za’atar
  • 2 teaspoons sumac
  • 1 teaspoon garlic salt, or to taste
  • 1 teaspoon sugar

Preparation

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Place onions and red pepper in a small zipper seal bag. Seal the bag and crush with a meat mallet or rolling pin to break up all ingredients.
  3. Transfer to a small bowl and stir in brown sugar, sea salt, and paprika.
  4. Whisk egg white in a medium bowl until foamy. Add walnuts and stir well with a rubber scraper to coat as evenly as possible.
  5. Sprinkle with the onion and sugar mixture and stir well again.
  6. Transfer to the prepared baking sheet and bake for 15 minutes or until walnuts are golden brown, stirring every 5 minutes. Let cool to crisp, then transfer to an airtight container.

Recipe Tip: Walnuts may also be cooked in an air fryer set at 350°F for 8–10 minutes, stirring occasionally.
