Ingredients

  • 6 cups 3/4-inch cubes seedless watermelon
  • 3/4 cup California walnuts, coarsely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1/3 cup crumbled feta cheese
  • 3 tablespoons snipped fresh basil

Preparation

  1. Place watermelon and walnuts in a large bowl.
  2. Whisk together oil, lemon juice and vinegar in a small bowl and season with salt and pepper.
  3. Drizzle over watermelon mixture and stir to coat with dressing. Let marinate for up to 1 hour.
  4. Top with feta and basil just before serving.
  5. Recipe tip: Add 1/2 cup small cubes of cucumber to the salad along with the watermelon walnut mixture.
