Ingredients
- 6 cups 3/4-inch cubes seedless watermelon
- 3/4 cup California walnuts, coarsely chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1/3 cup crumbled feta cheese
- 3 tablespoons snipped fresh basil
Preparation
- Place watermelon and walnuts in a large bowl.
- Whisk together oil, lemon juice and vinegar in a small bowl and season with salt and pepper.
- Drizzle over watermelon mixture and stir to coat with dressing. Let marinate for up to 1 hour.
- Top with feta and basil just before serving.
- Recipe tip: Add 1/2 cup small cubes of cucumber to the salad along with the watermelon walnut mixture.
